Chinese cooking: Sautéed noodles with chicken and ginger

Depending on the region, noodles in China will either be made from wheat (in the north) or rice (in the south).
They might even be made from soya! Choose from thick or thin varieties, according to your taste.

Natural sautéed noodles will go with any dish that's made in the wok. You simply need to brown the noodles in the wok in hot sesame oil.

When noodles are garnished, they become a main course in themselves, such as the well-known chow mein dish. Chicken, beef, prawns and pork all go well with noodles.

Ingredients (serves 4)

4 thinly sliced chicken fillets
250g Chinese egg noodles
2 carrots
1 pepper
2 shallots
2 cloves of garlic
2 onions
2 tablespoons grated or ground ginger
3 tablespoons soy sauce
