Chinese cooking; Chinese noodle and prawn soup

 


Warming Chinese soup always includes long noodles, which are a symbol of longevity and prosperity so don't cut them!

Be generous with fresh herbs (chives, coriander, etc) and add a dash of lemon juice just before serving.

Ingredients (serves 4)

450g raw prawns
1 chicken stock cube
1 stick lemongrass, or a couple of leaves if unavailable
Juice of 1/2 lime
1 carrot
150g Chinese noodles
1 chili
1 teaspoon soy sauce
A few coriander leaves
