Chinese cooking: Cantonese fried rice with prawns


Cantonese rice is basically fried rice sautéed with other ingredients. Traditionally made from old leftovers, you can vary the ingredients as you please and replace the prawns with ham, chicken, pork or beef, for example.

Simple and quick to make, it can be partially prepared in advance by cooking the rice and slicing the other ingredients. It's ideal as an evening meal when you know you're going to be late home because it's ready in 5 minutes, the time it takes to brown everything!

Ingredients (serves 4)

250g long grain rice
100g peas (fresh or frozen)
200g frozen pre-shelled prawns
1 onion
2 eggs
To decorate: a handful of cashew nuts (optional)
