Ingredients

Pastry:
20g yeast
100ml milk
250g flour
1 pinch salt
1 flat tbsp castor sugar
1 egg
75g softened butter

Filling:
250ml milk
½ vanilla pod
1 whole egg + 2 yolks
50g castor sugar
1 flat tbsp cornflour
1 flat tbsp flour
100ml liquid cream
100g butter

Glazing and garnish:
1 egg
1 tsp milk
1 tsp icing sugar
1-2 tsp sugar
1 tsp gold/amber rum
5g butter
