Broccoli parcels

Preparation time: 15 minutes
Cooking time: 10 minutes

Ingredients (serves 4)
6 filo pastry sheets
2 broccolis
1 punnet cherry tomatoes
50g butter
1 tablespoon olive oil
Salt, pepper
salad mix
1 pinch curry powder

> Cook the broccoli in salted water for 10 minutes. Drain and separate the florets. Crush with a fork. Add the curry powder then the olive oil, salt and pepper.

> Melt the butter and brush it all over a pastry sheet. Place another sheet on top for double thickness.

> Cut into 6 triangles. Place a triangle on a plate then add a spoonful of broccoli in the middle of it. Fold the edges into the middle in order to get a little triangle. Brush a bit of egg yolk over it and bake in the oven for 10 minutes at 200°C (Gas Mark 6).

> Serve warm on a bed of salad with some cherry tomatoes.
