Chicory salad with dried apricots and goat's cheese

Preparation time: 10 minutes

Ingredients (serves 4)
6 heads of chicory
6 dried apricots
200g goat's cheese
2 tablespoons golden raisins
2 tablespoons flaked almonds
2 tablespoons balsamic vinegar
6 tablespoons olive oil
chive, chervil
salt, pepper

> Cut the chicory into slices, cut the apricots into quarters, and cut the cheese into thin strips.

> Pour all the ingredients into a salad bowl and add the raisins and almonds.

> In a separate bowl, mix together the vinegar and olive oil. Pour over the salad. Sprinkle on the chive, chervil, salt and pepper.
