Pork medallions with courgettes and raisins

Pork has a reputation for being a high-fat meat. However, if you choose your cuts carefully, you can still enjoy it while watching your weight, especially with filet mignon of pork.

Try preparing it in a pressure cooker to save time and keep it juicy.

2 pork medallions, 400g each
1kg courgettes
75g raisins
100ml chicken stock, with fat skimmed off
1 garlic clove
1 bouquet garni
2 tablespoons olive oil
Salt, pepper
