How can you make it lighter?

Barbecueing is an excellent way of diet cooking.

Avoid oily, buttery marinades and go for tasty mustard, tomato and lemon- based marinades instead.  For sauces and dressings, try using yogurt, low-fat cream cheese, olive oil and vinegar.

Herbs and spices are essential for bringing out the flavors of the ingredients you use.  Try perfuming the coals as well, using pine cones, cedar chippings, thyme, rosemary, bay leaves, fennel or cinnamon.
