Makes ~24 cookies
4 1/3 cups / 500g hazelnuts
1 cup sugar
1 tablespoon maple syrup
Zest of one small orange or tangerine
3 egg whites
Maple sugar for rolling
Whole hazelnuts for decoration
Preheat oven to 350 degrees.
In a food processor, pulse hazelnuts until they form a coarse meal. Pieces should not be larger than about 1/8” in diameter.
Transfer ground hazelnut meal into a bowl. Add sugar, zest, maple syrup, and eggs. Using a rubber spatula or gloved hands, mix ingredients together until they are well combined. Cover the dough and let sit for ten minutes, or until slightly dry to the touch.
Using your hands or a small cookie scoop, form dough into 1 oz balls. Roll cookies in maple sugar and top with a whole hazelnut by pressing nut into dough.
Bake for 12 minutes. Let cool completely.
