Preparation: 10 minutes
Cooking: 30 minutes at 405°F (210°C)
Ingredients for 4 people:
- 4 good, ripe peaches
- 1 lemon
- 1 vanilla pod
- 1 sprig of fresh sprig lemon thyme (or lemon zest if unavailable)
- 50g salted butter
- 50g sugar
Preheat oven to 405°F (210°C).
Wash peaches without peeling and dry well. Cut in two and remove stones, then arrange in an oven dish, open sides up.
Squeeze lemon into a glass, then snap vanilla pod, shake out seeds and add to lemon juice. Remove a few leaves of lemon thyme for decoration later.
Sprinkle peaches with small chunks of butter, sprinkle with sugar and drizzle with vanilla lemon juice.
Roast in the middle of the oven for half an hour, moistening regularly with cooking juices. Once removed from the oven, decorate with a few leaves of lemon thyme and serve hot.
A subtle mix of sweet and salt which will delight your guests!
