What’s the deal with stuffing? Is it safe or not?

Britishturkey.co.uk states that stuffing should never be put into the body cavity of the bird and should only be used in the neck cavity.

The reason for the debate is that cold stuffing inside the bird can reduce the internal cooking temperature which must reach over 74ºC/165ºF to kill bacteria. It’s also worth noting that without stuffing the turkey will cook faster which reduces the risk of dry, overcooked meat.
