1 kg white asparagus
500g green asparagus
10 teaspoons single cream
50g grated parmesan
juice of half a lemon
pinch of nutmeg
2 pinches salt
freshly ground white pepper
> Scrub, peel and rinse the asparagus and cook for 20 minutes in boiling water. Leave to dry on a folded tea towel.
> Put the cream into a bowl and whip until it starts to stand firm, add the salt, pepper, nutmeg and lemon juice. Whip to mix. Taste and season further if required.
> Chop the asparagus into quarters and put into an ungreased dish. Pour the creamy mixture over the top and sprinkle with grated permesan.
> Bake on a medium heat (160°C, th5) for 20-25 minutes.
