Ingredients for 6:
3 chicken breasts
2 Braeburn apples
Salt and black pepper
1 small handful of peanuts
150ml Greek yogurt
1 tablespoon liquid honey
1 tablespoon fresh lemon juice
1 teaspoon finely chopped confit ginger 1 tablespoon mustard
Mix all sauce ingredients together in a bowl, adjust seasoning if necessary, then chill.
Cut apples into four, core and cut each quarter into three, then into two lengthways.
Heat a little olive oil and sauté apple pieces until golden on both sides.
Slice chicken breasts into mouthful-sized pieces and season. Brown in olive oil on both sides.
Make brochettes by alternating a piece of apple with a piece of chicken on wooden skewers.
Heat if needed, before serving with sauce. Sprinkle with crushed peanuts and serve on a bed of salad, or with a baked potato.
