Sweet and sour chicken and crunchy vegetable stir fry


Serves 4

Ingredients:
500g jar Uncle Ben’s Sweet &
Sour sauce with Extra Pineapple
2 250g pouches Uncle Ben’s
Express Egg Fried rice
450g skinless, boneless chicken
breasts, cut into strips
350g small broccoli florets
225g sugar snap peas, trimmed
and halved lengthways
2tsp vegetable oil

How to make:
1. Heat the oil in a large wok or frying pan and stir fry the chicken for 5 minutes until it starts to brown. Add the broccoli florets, sugar snap peas and 2tbsp water and stir fry for a further 4 minutes.

2. Pour in the Uncle Ben’s Sweet & Sour sauce with Extra Pineapple and simmer
for 3-4 minutes until bubbling

3.Heat Uncle Ben’s Express Egg Fried rice according to packet instructions and
serve together.
